Recipe:

2 cups (450g) of beans

1 small onion

2 tablespoon ground crayfish

2 large pepper

1 level teaspoon tomato purée

2 tablespoons of red palm oil/vegetable oil

1/2 teaspoon of curry powder (optional spice)

1 - 2 cups of water (possibly hot)

Stuffings (boiled egg, boiled fresh fish, boiled beef or liver - These are optional)

Leave for wrapping or aluminium foil or cups.

Cooking method

Method:

1. Clean the beans, pick the stones and sticks if present.

2. Grind the crayfish and pepper and chop the onion.

3. Add the ground and chopped ingredients and tomato purée to the bean paste.

4. Beat to obtain a smooth paste.

5. Add warm Palm oil (or vegetables oil) and continue beating.

6. Add hot water and mix thoroughly to obtain a light mixture. Taste for salt.

7. Wrap the mixture in leaves or aluminium foil or put in small cups.

8. Out the stuffing inside each wrap or cup. Place above the boiling water. Use a steamer if available.

9. Steam until it is cooked.

10. Serve hot or warm with porridge or alone.

Alternatives and variations

Foods like moi-moi can also be prepared from commercially processed bean flour. Such packaged flour normally carries directions for use on their labels.
